Mexican red bean salad
Title: Mexican red bean salad
We'll need
- 1 can of red beans
- 1 small can of corn
- 1 can of tuna in water
- 1 cucumber
- 1 red onion
- 1 or 2 tomatoes depending on size
- Some black olives
- Mustard
- olive oil
- Red vinegar
- Salt and black pepper
- A pinch of cumin
- Tabasco (I have not set)
- 1 clove garlic, crushed
- Chopped coriander
how to proceed
1. First, rinse and drain the red beans and corn.
2. Drain tuna, rinse and cut into small of cucumber and red onions.
3. Rinse and cut into quarters tomato.
4. Prepare the vinaigrette by whisking vigorously mustard and vinegar and pour in a thin stream of olive oil, a creamy dressing must be obtained, add the crushed garlic salt and pepper and Tabasco sauce (optional).
5. In a bowl combine beans, corn, cucumber and red onion. Add dressing and mix well.
6. Arrange tuna in the center and place the tomatoes in area around.
7. Sprinkle with coriander and cumin (cumin can be included in dressing). and garnish with black olives.
