Scrambled Eggs Done Right






What You'll Need


  • 2 eggs
  • 1 teaspoon mayonnaise or salad dressing
  • 1 teaspoon water (optional)
  • 1 teaspoon margarine or butter
  • salt and pepper to taste (optional)

How to Make It


  1. In a cup or small bowl, whisk together the eggs, mayonnaise and water using a fork.
  2. Melt margarine in a skillet over low heat.
  3. Pour in the eggs, and stir constantly as they cook.
  4. Remove the eggs to a plate when they are set, but still moist.
  5. Do not over cook. Never add salt or pepper until eggs are on plate, but these are also good without.

Breakfast Enchiladas






What You'll Need


  • one (16 ounce) package frozen hash brown potatoes
  • one cup diced cooked ham
  • one tablespoon vegetable oil
  • one (4.5 ounce) can diced green chile peppers
  • one 1/2 cups shredded Cheddar cheese, divided
  • one (28 ounce) can green chile enchilada sauce
  • 8 (10 inch) flour tortillas

How to Make It


  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Brown hash browns and ham in 1 tablespoon of oil in a medium skillet over medium high heat.
  3. Stir in diced green chilies and 1/2 cup of Cheddar cheese.
  4. Cook until cheese has melted.
  5. Coat the bottom of a 9x13 inch baking dish with a small amount of enchilada sauce.
  6. Dip each tortilla in remaining sauce, and fill with potato-ham mixture.
  7. Roll each as tightly as possible and place in the baking dish, seam side down.
  8. Top with remaining sauce and cheese, and cover with tin foil.
  9. Bake, covered, in the preheated oven for approximately 20 minutes.
  10. Remove foil and bake for another 10 minutes, or until lightly browned on top.
  11. Serve immediately.

Guacamole with Banana






What You'll Need


  • tow ripe organic avocados
  • ½ banana, lightly mashed
  • one lime, zested and juice
  • one tablespoon cilantro, chopped
  • salt ,pepper
  • tow tablespoons tomato, finely diced
  • tow tablespoons red onion, minced
  • tow tablespoons sliced almonds
  • tow tablespoons red pepper, finely diced
  • tortilla chips, to serve

How to Make It


  1. Scoop the avocado flesh into a medium bowl, and use a large fork to mash until almost smooth (we like a few chunks left in there).
  2. Fold in mashed banana, diced tomato, red onion, red pepper, and almond slices, and stir to combine.
  3. Add the lime zest and juice, and season with salt and pepper.
  4. Serve with tortilla chips.

One-Pot Southwestern Quinoa Bake






What You'll Need


  • 1/2 teaspoon black pepper
  • 1/2 teaspoon kosher or sea salt
  • 1 1/2 cups salsa, no-sugar added
  • 2/3 cup water
  • 1 1/2 cups shredded cheddar cheese, reduced-fat
  • one cup dry quinoa, pre-rinsed
  • tow cans black beans, drained
  • one teaspoon cumin
  • tow teaspoons chili powder

How to Make It


  1. Preheat oven to 375 degrees F.
  2. Add to a 9 x 13-inch casserole pan the first 6 ingredients, stir to combine.
  3. Add salsa, water, and 3/4 cup cheese, stir until all ingredients are combined.
  4. Sprinkle the remaining 3/4 cup cheese on top.
  5. Loosely cover with foil and bake for 30 minutes, remove foil and bake an additional 5 minutes.

Chinese Chicken






What You'll Need


    Chicken

  • 1 pound boneless, skinless chicken breasts, sliced horizontally and then into short strips
  • 1-1/2 tablespoons canola oil
  • Marinade

  • one tablespoon peeled and minced ginger (about 1" ginger root)
  • one tablespoon garlic chili sauce or chili paste
  • one tablespoon hoisin sauce
  • one tablespoon lite soy sauce

How to Make It


  1. Mix together the marinade.
  2. Put the chicken strips/pieces in a bowl and toss well to coat evenly with marinade.
  3. Cover and place in the fridge for about 20 minutes.
  4. Add canola oil to a sauté pan over medium high heat.
  5. Once the oil is hot and shimmering (but not smoking) add the chicken strips.
  6. Cook the chicken for 3- 5 minutes until cooked through and the juices run clear.
  7. If the chicken pieces are larger, cook longer.
  8. Serve over brown rice, brown rice noodles, or quinoa.
  9. Garnish with chopped cilantro or chopped scallions, if desired.

No Bake Cookies






What You'll Need


  • tow cups white sugar
  • three tablespoons unsweetened cocoa powder
  • 1/2 cup margarine
  • 1/2 cup milk
  • one pinch salt
  • three cups quick cooking oats
  • 1/2 cup peanut butter
  • one teaspoon vanilla extract

How to Make It


  1. In a saucepan bring sugar, cocoa, margarine, milk, and salt to a rapid boil for 1 minute.
  2. Add quick cooking oats, peanut butter, and vanilla; mix well.
  3. Working quickly, drop by teaspoonfuls onto waxed paper, and let cool.

Faux Fried Cheese Sticks






What You'll Need


  • 4 reduced-fat string cheese sticks
  • 1 tablespoon flour
  • 1 cup panko (Japanese bread crumbs)
  • 1/2 cup egg substitute (or 2 egg whites)
  • 1 1/2 tablespoon Italian Herb Seasoning Blend

How to Make It


  1. Preheat the oven to 375 degrees. Spray a baking sheet with cooking spray.
  2. Pour the flour onto a small plate.
  3. Cut the cheese sticks in half.
  4. Roll the cheese sticks in the flour.
  5. Place the breadcrumbs and Italian herbs in a small container with a lid or zip-top bag and set aside.
  6. Pour the egg substitute into a shallow dish.
  7. Using one hand, roll the floured cheese sticks in the egg mixture.
  8. One at a time, using your other (dry) hand, transfer the cheese sticks to the bread crumb mixture and shake to coat.
  9. Using the dry hand, remove from the crumb mixture and place on the baking pan.
  10. Continue until all the cheese sticks are breaded.
  11. Spritz each cheese stick with cooking spray.
  12. Bake for 10 minutes or until cheese is bubbly and melted.
  13. If desired, dunk these cheese sticks in low-sodium tomato sauce (calories not included).
  14. Makes 4 two-stick servings.
