Mrs. Sigg's Snickerdoodles






What You'll Need


  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 1 1/2 cups white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons white sugar
  • 2 teaspoons ground cinnamon

How to Make It


  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Cream together butter, shortening, 1 1/2 cups sugar, the eggs and the vanilla.
  3. Blend in the flour, cream of tartar, soda and salt.
  4. Shape dough by rounded spoonfuls into balls.
  5. Mix the 2 tablespoons sugar and the cinnamon.
  6. Roll balls of dough in mixture.
  7. Place 2 inches apart on ungreased baking sheets.
  8. Bake 8 to 10 minutes, or until set but not too hard.
  9. Remove immediately from baking sheets.

Apple Crisp






What You'll Need


  • 10 cups all-purpose apples, peeled, cored and sliced
  • 1 cup white sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 cup water
  • 1 cup quick-cooking oats
  • 1 cup all-purpose flour
  • 1 cup packed brown sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 cup butter, melted

How to Make It


  1. Preheat oven to 350 degrees F (175 degree C).
  2. Place the sliced apples in a 9x13 inch pan.
  3. Mix the white sugar, 1 tablespoon flour and ground cinnamon together, and sprinkle over apples.
  4. Pour water evenly over all.
  5. Combine the oats, 1 cup flour, brown sugar, baking powder, baking soda and melted butter together.
  6. Crumble evenly over the apple mixture.
  7. Bake at 350 degrees F (175 degrees C) for about 45 minutes.

Chili Potato Burritos






What You'll Need


  • 4 potatoes, peeled and chopped
  • 1 cup shredded Colby-Monterey Jack cheese
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 clove garlic, minced
  • salt and pepper to taste
  • 8 (6 inch) flour tortillas
  • 1/2 cup red enchilada sauce

How to Make It


  1. Bring a large pot of salted water to a boil.
  2. Add potatoes, and cook until tender but still firm, about 15 minutes.
  3. Drain, cool and mash.
  4. Preheat oven to 350 degrees F (175 degrees C).
  5. In a medium mixing bowl, combine mashed potatoes, 3/4 cup cheese, chili powder, cumin, garlic, salt and pepper.
  6. Spoon evenly into tortillas, and roll up.
  7. Place rolled tortillas side by side in a 8x8 inch baking pan.
  8. Spread enchilada sauce evenly over the top, and sprinkle with remaining cheese.

Hot Tamale Pie






What You'll Need


  • cooking spray
  • tow pounds ground beef
  • tow cups diced poblano peppers
  • one teaspoon salt
  • one (16 ounce) jar salsa
  • 1/2 teaspoon dried oregano
  • one teaspoon ground dried chipotle pepper
  • tow (8.5 ounce) boxes dry corn muffin mix (such as Jiffy®)
  • tow eggs
  • 2/3 cup milk, divided
  • foor ounces shredded Cheddar cheese, divided
  • foor ounces shredded Monterey Jack cheese, divided
  • 8 ounces frozen corn, thawed

How to Make It


  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Spray a 9x13-inch casserole dish with cooking spray.
  3. Cook and stir ground beef in a Dutch oven over medium-high heat until meat starts to brown and release juices, about 5 minutes.
  4. Reduce heat to medium and stir in poblano peppers, salt, salsa, oregano, and chipotle powder; cook and stir until seasoned beef is crumbly and no longer pink, about 10 minutes.
  5. Mix one package of corn muffin mix in a large bowl with 1 egg and 1/3 cup of milk.
  6. Whisk to combine.
  7. In a separate large bowl, mix the second package of corn muffin mix with 1 egg, 1/3 cup of milk and half the Cheddar and Monterey Jack cheeses.
  8. Spread the prepared corn muffin mixture without cheese into the prepared baking dish.
  9. Sprinkle corn over the muffin mix, followed by remaining half of the cheeses, then the beef mixture.
  10. Spoon the corn muffin mix with cheese on top of the beef and carefully spread over the top with a fork, leaving about half an inch from the edges of the pan.
  11. Bake in the preheated oven for 50-60 minutes, until golden brown.

Best Tuna Casserole






What You'll Need


  • one (12 ounce) package egg noodles
  • 1/4 cup chopped onion
  • tow cups shredded Cheddar cheese
  • one cup frozen green peas
  • tow (6 ounce) cans tuna, drained
  • tow (10.75 ounce) cans condensed cream of mushroom soup
  • 1/2 (4.5 ounce) can sliced mushrooms
  • one cup crushed potato chips

How to Make It


  1. Bring a large pot of lightly salted water to a boil.
  2. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
  3. Preheat oven to 425 degrees F (220 degrees C).
  4. In a large bowl, thoroughly mix noodles, onion, 1 cup cheese, peas, tuna, soup and mushrooms.
  5. Transfer to a 9x13 inch baking dish, and top with potato chip crumbs and remaining 1 cup cheese.
  6. Bake for 15 to 20 minutes in the preheated oven, or until cheese is bubbly.

Easy Tuna Casserole






What You'll Need


  • 3 cups cooked macaroni
  • 1 (6 ounce) can tuna, drained
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 cup shredded Cheddar cheese
  • 1 1/2 cups French fried onions

How to Make It


  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a 9x13-inch baking dish, combine the macaroni, tuna, and soup.
  3. Mix well, and then top with cheese.
  4. Bake at 350 degrees F (175 degrees C) for about 25 minutes, or until bubbly.
  5. Sprinkle with fried onions, and bake for another 5 minutes.
  6. Serve hot.

Salsa Chicken






What You'll Need


  • 4 skinless, boneless chicken breast halves
  • 4 teaspoons taco seasoning mix
  • 1 cup salsa
  • 1 cup shredded Cheddar cheese
  • 2 tablespoons sour cream (optional)

How to Make It


  1. Preheat oven to 375 degrees F (190 degrees C)
  2. Place chicken breasts in a lightly greased 9x13 inch baking dish.
  3. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
  4. Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.
  5. Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly.
  6. Top with sour cream if desired, and serve.
