Vegetarian Kale Soup






What You'll Need


  • 2 tablespoons olive oil
  • 1 yellow onion, chopped
  • 2 tablespoons chopped garlic
  • 1 bunch kale, stems removed and leaves chopped
  • 8 cups water
  • 6 cubes vegetable bouillon (such as Knorr)
  • 1 (15 ounce) can diced tomatoes
  • 6 white potatoes, peeled and cubed
  • 2 (15 ounce) cans cannellini beans (drained if desired)
  • 1 tablespoon Italian seasoning
  • 2 tablespoons dried parsley salt and pepper to taste

How to Make It


  1. Heat the oil in a skillet over medium heat.
  2. Place turkey in the skillet, and cook until evenly brown; drain.
  3. Coat the inside of a slow cooker with cooking spray, and mix in turkey, tomato soup, kidney beans, black beans and onion.
  4. Season with chili powder, red pepper flakes, garlic powder, cumin, black pepper, allspice and salt.
  5. Cover, and cook 8 hours on Low or 4 hours on High.
