Title: Lemon meringue tarts Minis
Ingredients:
250g of flour
Cold butter 125g
1 tbsp sugar
1 egg yolk
1 pinch of salt
1-2 tablespoons of water if necessary
Lemon curd:
150ml of lemon juice
grated rind of 2 lemons very thin
150g caster sugar
3 eggs
1 case cornflour
Meringue:
2 egg whites
+ Their weight in sugar
Preparation:
1 - Mix with your fingers the cold butter cut into pieces with flour
2 - Add a pinch of salt, sugar and egg yolk, add water if necessary until a ball of dough (do not knead to keep the crispy). Film and place in the fridge for 30min
3 - Spread the dough on a lightly floured surface, and with a small circle cut out tarts
4 - Place the tart upside down on the mold (blank firing) take about 20-25 minutes in a preheated oven at 180 °

3 - Mix homogeneously all ingredients of lemon curd and then put in the microwave 3 times 1 minute on high, stirring every minute
4- Once the lemon curd cooled, garnish the tartlets using a pastry bag, place the meringue over (always piping bag), and give a helping torch (You can also replace the meringue fruits).
